Baked apple oatmeal

I am an oatmeal lover, but I am also a really lazy girl. Yes, making overnight porridge too. Having something ready for breakfast, healthy and full of oats was a dream for me. Therefore I tried this baked apple oatmeal – three apples left on the kitchen counter were screaming to be saved! It tastes soooo good. I can’t wait to try this recipe in so many versions!

THE RECIPE

I used homemade raw almond milk – 1 cup of almonds + 4 cups of water

[for 8 servings]

2 tbsp / 20 g chia seed + 6 tbsp / 90 ml water
2-3 apples – peeled and chopped / 360 g
2 cups / 215 g old-fashioned rolled oats – gluten-free if needed
1 tsp baking powder
1/4 tsp salt
1/4 tsp ginger powder
1/2 tsp cinnamon powder
1/2 tsp vanilla powder
1/2 cup / 70 g raisins
1/2 cup / 70 g raw almond – slightly roasted and chopped
2 cups / 500 ml almond milk

Pre-heat oven to 350° F / 175° C and mix chia seeds with water.

In a big bowl mix all the other ingredients. Add the almond milk to the “chia egg” and mix well. Pour this mixture into the bowl and stir until the ingredients are mixed enough. Spread it in an 8×10-inch / 20×25 cm baking dish and bake for about 40 minutes.

Serve warm or at room temperature, as it is or with milk – almond, soy, coconut… – and fresh fruit.

    Last evening you inspired me, so I tried an easier version with ingredients in my (poor) cupboard: oat, almond flour, apricots and blueberry juice. Well…acceptable. (I was really hungry).
